Food processing machinery - Band saw machines - Safety and hygiene requirements

This European Standard specifies requirements for the design and manufacture of band saw machines. The machines covered by this standard are used to cut meat, frozen meat, bone and other foodstuff. The band saw machines covered by this standard are distinct from woodworking band saw machines. The requirements described in prEN 1807 do not apply to the band saw machines described here.

Diese Europäische Norm legt Anforderungen an die Konstruktion und Herstellung von Bandsägemaschinen fest (siehe Bild 1 bis 5).
Die in dieser Europäischen Norm behandelten Maschinen werden zum Schneiden von Knochen und Fleisch verwendet.
Die in dieser Europäischen Norm behandelten Bandsägen sind keine Bandsägen zum Bearbeiten von Holz und ähnlichen Materialien und die in EN 1807 beschriebenen Anforderungen gelten nicht.
Bandsägemaschinen für den Hausgebrauch werden von dieser Europäischen Norm nicht erfasst.
Diese Europäische Norm gilt nur für Maschinen, die nach dem Ausgabedatum dieser Europäischen Norm erstellt werden.
Diese Norm umfasst folgende Bauarten von  Maschinen:
Bandsägemaschinen, die auf dem Fußboden aufgestellt werden, können verfahrbar ausgeführt sein (siehe Bild 6).
   Typ A
Bandsägemaschine mit Zuführtisch und fest angebrachtem Materialdrücker
Schnitthöhe SH < 250 mm
Aufstellungsort: Tisch (siehe Bild 1) oder Untergestell (siehe Bild 2). Abstand A zwischen Fußboden und Fläche Zuführtisch liegt in der Regel zwischen 800 mm und 1 050 mm.

Les scies a ruban sont constituées d'un bâti, d'une table d'alimentation fixe ou coulissante, d'un convoyeur a rouleaux ou d'un convoyeur a bande, d'un poussoir, d'un guide lame ajustable en hauteur, d'un volant supérieur et d'un volant inférieur, d'une lame de scie, d'un guide lame supérieur et inférieur, d'un systeme de tension de la lame, d'un systeme d'entraînement et de composants électriques, selon le type de machine. Le domaine d'application de la présente Norme européenne ne concerne pas les prescriptions relatives aux systemes de chargement/déchargement automatiques, aux convoyeurs, etc.
Pour les scies a ruban posées sur le sol, la matiere a scier est posée manuellement sur la table d'alimentation fixe ou coulissante, puis poussée au moyen du poussoir ou du rebord de la table coulissante ou au moyen du convoyeur a rouleaux ou du convoyeur a bande dans la zone de coupe de la lame de scie et coupée par cette derniere.
   Type B :
Scie a ruban ayant une table d'alimentation, un guide lame ajustable et une hauteur de coupe SH telle que : 250 mm * SH < 420 mm.
La distance A entre le sol et la face supérieure de la table d'alimentation est comprise entre 800 mm et 1050 mm.
Plan de pose : sur le sol (voir Figure 3).
   Type C :
Scie a ruban ayant une table d'alimentation coulissante, un guide lame ajustable et une hauteur de coupe SH telle que 250 mm * SH < 420 mm.
La distance A entre le sol et la face supérieure de la table d'alimentation coulissante est comprise entre 800 mm et 1050 mm.
Plan de pose : sur le sol (voir Figure 4).
   Type D :
Scie a ruban ayant une unité d'alimentation et d'évacuation des produits (par exemple convoyeur a rouleaux, convoyeur a bande) intégrée dans une ligne de coupe, avec une hauteur de coupe SH < 550 mm.
La distance A entre le sol et la surface d'alimentation est comprise entre 800 mm

Foreword
This document (EN 12268:2003) has been prepared by Technical Committee CEN/TC 153 “Food processing
machinery – Safety and hygiene requirements”, the secretariat of which is held by DIN.
It has been prepared by Working Group 2 "Meat Processing Machinery" of CEN/TC 153.
This European Standard shall be given the status of a national standard, either by publication of an identical text or
by endorsement, at the latest by October 2003, and conflicting national standards shall be withdrawn at the latest
by October 2003.
This document has been prepared under a mandate given to CEN by the European Commission and the European
Free Trade Association, and supports essential requirements of EC Directives.
For relationship with EC Directives, see informative annex ZA, which is an integral part of this document.
It is one of a series of standards which have been prepared for machines and equipment for meat processing in
compliance with EN 1672-2:1997and annex C and attends to machines, which are attached by Annex IV of
Machinery Directive 89/37 EEC. Band saw machines, which are not fed by hand, do not come under Annex IV.

This European Standard covers
Band saw machines designed as table-top machines with and without base
Band saw machines designed as floor-type machines
Band saw machines integrated in a cutting line
The extent to which hazards are covered is indicated in this European Standard. For other hazards which are not
covered by this European Standard, machinery should comply with EN 292 where applicable.

1 Scope
This European Standard specifies requirements for the design and manufacturing of band saw machines (see
Figures 1 to 5).
The machines covered by this European Standard are used to cut bone and meat.
The band saw machines covered by this European Standard do not include band saw machines for processing
wood and similar materials and the requirements of EN 1807 do not apply.
Band saw machines for domestic use are not included in this European Standard.
This European Standard only applies to machines which are manufactured after the date of issue of this European
Standard.
This European Standard covers the following types of machines:
Band saw machines which are placed on the floor and can be wheel-mounted (see Figure 6).
Type A
Band saw machine with a feed table and a fixed product pusher
Cutting height SH < 250 mm
Location: Table (see Figure 1) or base (see Figure 2). Distance A from the floor to the top surface of the feed table
is between 800 mm and 1050 mm.

Band saw machines consist of a machine casing, a fixed feed table or a sliding feed table, a roller conveyor or
conveyor belt, a product pusher, a height-adjustable protective rail, a top and a bottom wheel, a saw blade, an
upper and lower blade guide, a blade tensioning device, a drive and electrical components, depending on machine
type. The requirements for automatic loading/unloading systems, conveyors, etc. do not fall within the scope of this
European Standard.
The intended uses of the machines are described in clause 7.
On floor-type band saw machines, the product to be cut is placed by hand onto the fixed feed table or sliding feed
table and pushed against the cutting zone of the saw blade by means of the product pusher or the rear table wall
on the sliding feed table or by means of the roller conveyor or conveyor belt and sawed.

4 List of hazards
4.1 General
This clause and annex C contains the hazards and hazardous situations, as far as they are dealt with in this
European Standard, identified by a risk assessment significant for meat band-saws and which require action to
eliminate or reduce risk.
Before using this standard it is important to carry out a risk assessment of the meat band-saw to check that it has
the hazards identified in this clause.

5 Safety requirements and/or measures
5.1 General
Meat band-saw machines shall comply with the safety requirements and/or protective measures of this clause and
annex C. In addition, they shall be designed according to the principles of EN 292 for hazards relevant but not
significant, which are not dealt with by this document (e.g. sharp edges).
NOTE For hazards which are to be reduced by the application of another standard such as EN 294, EN 953, EN 1672-2, EN
60204-1, etc. the manufacturer should carry out a risk assessment to establish the requirements of that other standard which
are to be applied. This specific risk assessment is part of the general risk assessment of the machine.
Where the means of reducing the risk is by the physical arrangement or positioning of the installed band-saw
machine, the manufacturer shall include in the Information for use a reference to the reduction means to be
provided, and to any limiting value of the requirement, and, if appropriate, to the means of verification.
Where the means of reducing the risk is by a safe system of working the machinery, the manufacturer shall include
in the Information for use details of the system and of the elements of training required by the operating personnel.
5.2 Mechanical hazards
5.2.1 Band saw machines types A - D, saw blade protection
Zone 1
Access to the saw blade outside the cutting zone shall be prevented. This can be achieved e.g. by the following
measures:
A closed machine casing shall be provided. The doors of the casing and the removable or tiltable feed table shall
be interlocked.
For requirements relating to the interlocking system of doors and the feeding table, see 5.2.2.
After opening the door or the feed table more than 10 mm, the blade should come to a standstill as soon as is
possible, but the time taken shall not exceed 4 s.
5.2.2 Interlocking devices
The interlocking system shall comply with 4.2.1 of EN 1088:1995, and the safety related components of the control
system shall comply with 6.2.2, category 1 of EN 954-1:1996.
The interlocking device shall be built inside of the machine housing in order to
fulfil hygienic requirements,
protect against mechanical damages,
protect against the effects of cleaning and disinfection materials,
protect against the effects of cleaning fluids (water),
protect against defeating by simple methods,
and comply with 5.7 of EN 1088:1995.

In the instruction handbook, the manufacturer shall indicate the need for verification of the interlocking devices, and
for the user to determine the frequency of verification depending upon the usage of the machine.
5.2.3 Band saw machines type A with fixed feed table, cutting height SH < 250 mm
Zone 2, type A
Access to the cutting zone of the saw blade shall be prevented. This can be achieved e.g. by the following
measures:
A fixed, movable product pusher shall be provided (see Figures 1 and 2). The product pusher shall be designed so
as to automatically revert to its protective position by its own weight. Distance A1 between the product pusher and
the feed table shall be < 6 mm (see Figure 2). Design example, see section A - A, Figures 1 and 7.
A horizontal adjustable portioning plate of a height > 60 mm shall be provided. The portioning plate may be
designed to be tiltable and removable.
It shall be possible to change the saw blade without removing the product pusher.

5.2.4 Band saw machine with fixed feed table type B or sliding feed table type C, cutting height SH ‡ 250
mm - SH £ 420 mm
Zone 2, type B and type C
Access to that portion of the cutting zone of the saw blade which is not used for cutting shall be prevented. This can
be achieved e.g. by the following measures:
A height-adjustable, fixed protective rail shall be provided (see Figures 3 and 4). The protective rail shall be
designed such that the uncovered length of the saw blade with the protective rail in the lowest position is maximal
105 mm (see Figure 9). Design example, see section B - B (see Figures 3 and 8).

Zone 2, type C
The sliding feed table shall be provided with a table rear wall with a finger protection bar. The table rear wall shall
be > 60 mm high, the finger protection bar shall be > 100 mm high and > 50 mm wide. Tapering towards the top to
25 mm is admissible. The finger protection bar shall overlap the saw blade in the position of maximum forward
travel of the sliding feed table by > 10 mm (see Figure 9 and 10).

When the sliding feed table is locked or tilted down, it shall be possible to establish a continuous table surface or
this shall be present. In the case of a locked sliding feed table, it shall be possible to tilt down the table rear wall

A horizontal adjustable portioning plate of a height > 60 mm shall be provided. The portioning plate may be tiltable
and detachable.
A last slice device of a height > 150 mm shall be provided. The last slice device may be provided with spikes on the
side facing the saw blade. The last slice device may be removable.
A removable product pusher may be provided.
Zone 5, type C
The sliding feed table shall be designed so as to prevent any jumping out or sliding out from the slide and guide
rails.
5.2.5 Bottom and top wheels, type A - D
Zone 3
Access to the inrunning nips on the bottom and top wheels shall be prevented. This can be achieved e.g. by the
following measures:

5.2.7 Drive system, type A - D
Zone 6
Access to the danger points on the drive system shall be prevented. This can be achieved e.g. by the following
measures:
Guards (e.g. doors) in accordance with 3.2 of EN 953:1997 shall be provided on the drive mechanism, which may
be fixed or interlocked.
If guards are removable e.g. for changing the operating process or for cleaning purposes, they shall be interlocked.
For requirements relating to the interlocking systems of guards, see 5.2.2.
5.3 Electrical hazards
5.3.1 General
The electrical equipment shall comply with EN 60204-1.
5.3.2 Stopping function of switching devices
The stop function of switching devices shall be in accordance with Category 0, 9.2.2 of EN 60204-1:1997.
5.3.3 Emergency stop-device
The OFF switch shall be easily reachable from the operator position.
NOTE An emergency stop device need not be installed for band saws conforming to this standard.
5.3.4 Protection against water ingress
5.3.4.1 IP degrees of protection
